Mini Pizzas


So everyone loves pizza right? Whether its covered in veggies or loaded with chicken or ham, I am always a huge fan of pizza.  Ben and I are always making homemade pizzas.  However I don't always love taking a big piece of pizza to school.  I like to make sure my lunches are pretty compact so I can pack them in my bag.  So when I saw the idea for mini pizzas, I immediately knew I needed to make them.



Ingredients:
- Pizza dough (We used a mix, but any pizza dough would work)
- Pizza sauce
- Your favorite pizza toppings! We decided to use just cheese and some green bell peppers.

Directions:

Spray a muffin tin with some baking spray. Preheat the oven to the temperature required for your specific pizza dough.  Ours was 425.  Go ahead and cut or pull apart your dough into smaller pieces.  The pieces should just be enough to fit into the muffin tin.  Smush the dough into each hole.  Once all of the dough is in place, begin spooning a little bit of sauce onto each bit of dough.  I would say we used about one spoonful for each pizza, and it was perfect!

Next up is the fun part.  You can pile on every topping you want onto your mini pizzas.  Like I said before we went pretty simple with just cheese and peppers, but your mini pizzas can be as elaborate as you want. We always love a good Hawaiian pizza, and that will most likely be our next adventure with mini pizzas.

Now pop those bad boys into the oven.  We probably cooked ours for about 10 to 15 minutes.  The main thing you need to look out for is the crust.  You will definitely want a cooked crust, so don't pull them out too soon!

My Overall Rating:
Well there is a ton of flavor in each tiny little pizza. They are the perfect size for lunch and very compact. My favorite part about these pizza bites is that you can freeze any leftovers.  Ben and I both ate two pizzas a piece for lunch the next day and froze the remainders.  I actually just had a frozen one today, and it was every bit as delicious as the day after.  I would give these pizzas a 5/5.  They are perfect for lunch and not a bit of flavor is lost in their small size.
