What you'll need:
- 1 C skim milk (if you want to be extra healthy)
- 1/2 cup cinnamon applesauce
- 1 C all purpose flour
- 1/2 C brown sugar
- 2 egg whites
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon (add more if you're using regular applesauce)
- 1 tsp. sugar
How you do it:
Place oats in skim milk and let soak for one hour. Pre-heat oven to 400 degrees. Mix egg whites and applesauce together. Add oat mixture to the applesauce mixture. In a separate bowl combine all dry ingredients. Slowly add dry ingredients to wet ingredients. Mix together until combined. Be careful not to over mix, or the muffins will become tough. Bake for roughly 20 minutes or until toothpick comes out clean.
